HeavenSake: A Cross-Cultural Symphony of Japanese Tradition and French Elegance
HeavenSake, the innovative collaboration between celebrated French cellar master Régis Camus and Japan’s top Sake breweries, represents the best of two worlds—Japanese brewing expertise fused with the artistry of French winemaking. With a focus on Junmai Sakes, HeavenSake offers a pure and refined drinking experience. At Sushi ii, we are proud to feature two exceptional HeavenSake Label Noir assemblages, crafted in partnership with Dassai and Tatenokawa, delivering a sensory journey through intricate flavors and aromas.
HeavenSake at Sushi Ii: The Label Noir Assemblages
Sushi ii’s menu offers two distinct HeavenSake Label Noir Sakes, each reflecting the masterful blending skills of Régis Camus and the unique characteristics of their partner breweries:
Régis Camus x Dassai:
This assemblage harmonizes the elegance of Dassai’s Junmai Daiginjo craftsmanship with Camus’s expertise in blending. The result is a sophisticated Sake that bursts with the flavors of early summer pears, wild red berries, and muscat grapes. These fruity notes are complemented by delicate floral aromas, with hints of jasmine, lily, and iris. This fragrant and refined Sake is an ideal pairing for light, delicate sushi, enhancing the subtle flavors of raw fish and rice with its refreshing profile.
Régis Camus x Tatenokawa:
In this assemblage, Camus collaborates with Tatenokawa, a brewery renowned for pushing boundaries with innovative rice polishing techniques. The blend offers a lush, tropical profile with flavors of passionfruit, pineapple, and white peach, balanced by a melon and pear aroma on the nose. This vibrant Sake pairs beautifully with richer seafood dishes, such as fatty tuna or eel, adding layers of sweetness and complexity to the palate.
Coming Soon: Noguchi, Niizawa, and Katsuyama Sakes
Sushi ii will soon add three more Sakes from the HeavenSake collection: Noguchi, Niizawa, and Katsuyama. These renowned breweries bring their unique heritage and brewing techniques to the HeavenSake family, continuing the brand’s tradition of blending expertise across cultures. Each Sake will offer its own distinct personality, complementing the wide variety of flavors on our menu and inviting guests to explore the depth and artistry of Japan’s finest Sakes.
The Philosophy Behind HeavenSake
HeavenSake focuses on Junmai Sake, the purest form of Sake made exclusively from rice, water, yeast, and koji mold, without added alcohol or sugars. This minimalist approach aligns with the brand’s commitment to quality and health-conscious craftsmanship, creating Sakes that are free from sulfites and lower in acidity.
Collaborating with Master Brewers
HeavenSake’s philosophy of collaboration has brought it together with some of the most renowned breweries in Japan, including Dassai (Yamaguchi Prefecture) and Tatenokawa (Yamagata Prefecture). These partnerships allow HeavenSake to create blends that highlight the best of both traditions, infusing Japanese brewing techniques with Camus’s blending mastery, honed through decades in the Champagne industry.
Designed for a Modern Palate
Each HeavenSake creation is crafted with versatility in mind, designed to complement both Japanese and international cuisines. Best enjoyed chilled, these sakes are often served in wine glasses to showcase their nuanced aromas and flavors. HeavenSake bridges cultures by inviting Sake enthusiasts and newcomers alike to enjoy this refined beverage across a variety of dining settings, from sushi to Western dishes.
